Sweet Potato - Delecious Salad

Delecious Salad - Sweet Potato
For the lovers of sweet potatoes, whether its the red, yellow or purple variant, you will definitely love this salad.
Ingredients for this Menu
  1. 2 kgs of red sweet potatoes
  2. 1/2 kgs of yellow sweet potatoes
  3. 1/12 cup of white vinegar
  4. 1/12 cup of olive oil1/3 clove garlic (minced)
  5. 1/12 cup of dill pickle relish1/6 cup of red onion (chopped)
  6. 1/9 cup of mayonnaise
  7. 1/9 cup sour cream
  8. 1/6 cup of chopped parsley
  9. A pinch of ground black pepper
Preparations
Boil the red and sweet potatoes with water for 15 minutes until they are tender but still firm.
Drain the water.
After the potatoes are cool, remove the skin and cut them into small cubes.
Mix the vinegar, olive oil, minced garlic, dill pickle relish and chopped onion in a large salad bowl.
Add in the potato cubes and gently mix.
Whisk the mayonnaise, pepper, sour cream and parsley with a metal whisk in another bowl.
Pour the mixture over potatoes and refrigerate the salad for at least 8 hours before serving.

Tips
You can prepare this salad in the morning before leaving for work and it can be consumed by the time you are at home. ;)
